Oct. 3rd, 2004 09:19 pmAfter a long glorious weekend filled with large amounts of doing nothing, we are back from Winthrop.
I feel SO much less stressed!
We napped, watched the stars, read, played on the computer, napped some more, went out to eat, visited the farmers market, napped again, and generally goofed off.
We had a nice dinner up at Sun Mountain lodge in celebration of
jeffreycornish's birthday this coming week. We also had a nice sit down dinner with some old family friends. I decided to give Jeff's mom a break and so I made dinner. Ok. So Jeff's dad was nice enough to bbq the chicken, but I did everything else. We had morroccan chicken (marinated in olive oil, garlic, oregano, allspice, cumin, and cloves), greek salad (lettuce, tomato, cucumber, feta cheese with an olive oil, lemon, oregano dressing), and wild rice for dinner. Dessert was all about Jeffrey's favorites. The old family friends made him pumpkin pie (one of his favorite treats), and I made vanilla bean angel food cake. From scratch. With real vanilla beans... I also used vanila bean to make vanilla sugar to flavor the berries and the whipped cream. I also let the bean pods soak in the cream for several hours before I whipped it... MMmmmmm.... Lots of vanilla! :-) Happy birthday to Jeffrey (on Wednesday)! :-)
The weather was clear and not too hot. I think it may have hit 80 during the day, but it didn't feel hot. It got down into the 30s at night, so the gas fireplace felt really good as did the extra blankets. It was just beautiful. We went over at night, so we got to see the moon in all it's almost full glory. It seemed to hang between the mountains like a giant pearl. It was really pretty! :-)
I suppose I should think about getting ready for bed. Both of us have to work tomorrow...
