waterless cookware has an aluminum core with stainless steel encasing it. They are really heavy duty and have a life time warranty! :-) They heat really evenly and and you can cook veggies and such without water. Heat the pan on medium until the moisture in the food starts to steam, then either turn it down to low and cook, or turn it off and let it sit.

I'm only just learning how to use them that way! :-)
