I just made a really nummy Thai dish for dinner! It wasn't at all what I think of when I think of Thai... It's a shrimp based stir fry.
We served it over aldente rice noodles. It would probably be pretty good over vegitables as well.
Along with the shrimp stir fry, we had steamed pork/veggie buns. We finished off the meal with mochi (ice cream wrapped in bean paste). I really ejoyed the whole meal. I tried several new things and liked them! Go me! :-) I was happy that I didn't dislike the cilantro or the curry powder (I think I just didn't like the kind of curry powder I had before). I think I'll probably use a little less cilantro next time. But there will be a next time! I think I'll try chicken, though, but only becuase it's a little less expensive... :-)
I had a good time in Portland. I taught 2 classes and people seemed to do better with the slightly easier cards. It was also fun to hang with my family. Kevin and Diane had Coldstone gift certificates that they wanted to use, so we endulged on Friday. There is also a really good donut place down there, so I like to bring back donuts for Jeff and I. My family all decided that they wanted some this time, so I ended up getting a bunch. Mine were really yummy!
The drive back was pretty uneventful and I made it to Chuck's place in a fairly reasonable amount of time. I did a couple of loads up and down the stairs (his old place was on the 3rd floor) before my knees started complaining. I didn't want them to go out, but I didn't want to leave, either. So I started staging boxes from the back rooms into the living room and landing. Chuck has lots of heavy comic book boxes. I was very glad that I didn't have to haul them down the stairs... Kudos to the others who did! :-)
After helping Chuck, Jeff and I ditched the strawberry feed (it was late enough that we weren't going to make it back...) and went to Fry's. I like Fry's a lot! :-) We found the SD mini cards our phones take for a reasonable price and picked them up. Jeff also got a pair of headphones and a cushy light blocking eye pillow for sleeping in on weekends. As we were coming out, we met Gene and Mike going in. After Jeff and I failed our "find a good sounding restaraunt" roll, we joined Gene and Mike in wandering around the store and then followed them over to Red Robin for dinner. I had a lack of food headache that was almost a migraine. The loud atmosphere didn't really help any, but the food was still good. The company was even better. I just hope I wasn't too out of it!
On the way home, we made a quick Central Market stop to get stuff for tonight's dinner. I'm glad I got it then instead of waiting. I needed something not fast foodish (like the hamburgers I had planned... :-).
Today has been a nice, quiet, relaxing day. We're also thinking of going to bed early. That sounds marvelous! :-)
- Sprinkle 1/2 tsp curry powder (I actually used graham marsala) over 10-12 oz uncooked shrimp.
- heat pan over medium high heat until pan is hot (2-3 minutes). Pour 1 Tbsp peanut (or vegitable) oil into pan and then add shrimp. Stir-fry 1 minute or until shrimp turn pink.
- Add 1 Tbsp finely chopped fresh ginger and 2 cloves of garlic, finely chopped. Stir fry 15 seconds.
- Add 1/3 c unsweetened coconut milk as well as the zest and juice from one smallish lime (ideally 1 tbsp juice and 1 tsp zest). Add 1/8 tsp salt and 1/8 tsp fresh ground pepper. Stir-fry 30 seconds.
- Stir in 2-3 Tbsp chopped cilantro and about 1/3 cup thinly sliced green onions. Stir-fry 15 seconds.
- If desired, garnish with 1 Tbsp cilantro and 1 Tbsp sliced green onions.
